Nostalgic Menu to Launch at Shangri-La’s Le Touessrok Resort & Spa, Mauritius

Former Le Touessrok owner and critically acclaimed chef, Jacqueline Dalais, returns to launch a one-off five course menu at the iconic Mauritian resort on 2 June 2017

London: May 2017 – Shangri-La’s Le Touessrok Resort & Spa, Mauritius is excited to announce a special collaboration with the hotel’s former owner and Head Chef, Jacqueline Dalais. Le Touessrok, named after the island of Touessrok in Brittany, is near the village that Jacqueline Dalais originated from. The granddaughter of the hotel’s original landowners, Dalais catapulted the resort to fame almost forty years ago and put Mauritius on the culinary map with her delicious and generous seafood inspired dishes. On the 2nd June 2017, Shangri-La’s Le Touessrok Resort & Spa will launch a five-course menu reinventing the traditional dishes Jacqueline Dalais used to serve to her esteemed guests, including Princess Anne, internationally acclaimed Belgian singer Jacques Brel and world famous French actress Brigitte Bardot, throughout the 1960s and 1970s. Dalais’ return to the five-star resort’s kitchen will bring both a sense of nostalgia and reinvention as the property prepares to celebrate its 40th anniversary as Mauritius’ most iconic hotel in 2018.

The new Dalais menu will be on offer to guests at the Republik Beach Club & Grill once a week from 2nd June 2017 indefinitely. Located on the resort’s exclusive Frangipani islet where the original Le Touessrok hotel once stood, this stylish restaurant is a contemporary oceanfront haven, complete with a chic bar, bohemian lounge, sunken sand seating, fire pits and communal tables.

Inspired by the land and sea of Trou d’Eau Douce, the five-course set menu will showcase freshly caught seafood and locally grown produce including Dalais’ famous cappuccino of sea urchins, lobster in red sauce, a fresh fish filet with vegetables infused with makrut lime wrapped in banana leaf, followed by an old-style slow cooked red deer with mashed taro root and, to finish, a divine selection of Dalais’ favourite desserts.  

To create this one off revival menu, Jaqueline Dalais has worked closely with the current chefs at Shangri-La’s Le Touessrok Resort & Spa, sharing her recipes of traditional Mauritian dishes inspired by her childhood on the island, as well as cooking techniques passed down through generations of the Dalais family. The collaboration seeks to harness traditional Mauritian flavours, whilst catering to more modern tastes.
